The displayed Product Categories are integrated using the Product Categories widget, accessible under Dashboard > Appearance > Widgets > Shop page Widget area.

However, the default version of this widget lacks the capability to selectively show or hide specific categories at this time.

Alternatively, consider crafting a menu for product categories. Customize the menu by adding the desired categories, and then place the navigation menu in the shop page widget area, selecting the categories menu for display.

Navigate to Appearance > Menu > Create menu for sidebar and add the the menu as you want:
