You cannot edit these functional pages directly with Elementor. If you want to edit the shop page with elementor you need to use custom layouts for this.
So if you do not want all categories, navigate to Theme Settings -> Product archive -> Page title. With the help of the “Exclude categories” area, you can hide some categories thus you can show only the required ones: https://take.ms/uES2F

02. Regarding the logo, you are using the custom header on your site for the home page and choose the logo center header, Woodmart theme provides the option to create different headers for different pages: https://xtemos.com/docs-topic/how-to-set-different-header-for-specific-page/
You can make the “Header logo center” as default header then the center logo will work on all pages.
