is it possible to exclude specific categories from being displayed in the shop page?

Go to Theme Setting -> Product Archive -> page title -> Exclude categories for page title.

Now I get the point! And there is a misunderstanding, as I meant something different.
Look at the printscreen attached. in my shop, I sell bottles, but you can also find different types of shoppable products like the gift card, the bundles and even the events.
How can exclude from displaying in the shop all categories of product that are not bottles?

If you want to hide specific category

then under the WoodMart Theme, using the Theme’s Layout Builder you can create Custom Layouts for WooCommerce pages like Shop, Category,So, you can use that to create your own custom layouts for these pages.
