01. Sorry to say your given login details are not working. Please make sure that the Maintenance mode option is disabled from Theme Settings -> Maintenance. If the issue remains, deactivate the plugins not related to the theme and check the issue.
02. These are product Categories. Navigate to Products > Categories > Edit Category > In the edit category page change the title and the icon.
Then, Navigate to Appearance > Menu > Edit Categories Menu > Expand menu item and Check the HTML Blocks and edit it.

Yes, you can use separate HTML Blocks for Separate products. It is based on your requirements. You can use only one HTML Blocks for all products or add separate.
If it does not work you need to disable the custom layout for a single product page from Dashboard > Layouts and check the issue.

You need to disable the custom layout for a single product page from Dashboard > Layouts then this layout will work on your site.
Navigate to Theme Settings > Single Product > Reviews > disable the option “Pros and cons”.
