You can configure the view of your product category page in Appearance > Customize > Woocommerce > Product catalog view. You will find the option to show products or products and/or subcategories.

Our theme provides additional options for the categories. You can create HTML block https://xtemos.com/docs/woodmart/html-blocks-2/ This is just a WP bakery template, insert Product catalog element and configure which categories to show.
