can you please kindly check and let me know where to find the products (grid/carousel) elements settings where I will be able to setup highlighted products, sales countdown timer and data sorting to improve site inspiration.

One thing at a time because after this resolution I may have a few more.

I have seen and read this link but I cannot find this [products grid/carousel setting] feature on my installed child theme. Do I need to do anything else further because I have ticked all relevant boxes?

You can hide the count on all categories in the Theme Settings > Shop > Sidebar and titles. https://prnt.sc/pn1167
It is not possible to show counts on one category and hide on another.

Thank you. I have turned this function off now. The change has not reflected yet unless it takes 24 hours to reflect.
Alternatively, is it possible not to show that window anyway? That is not to show theme setting>page title completely? Again, what I mean is that if it is possible to show the main menu such as ‘shoes’, ‘bags’ or ‘accessories’ on its own when clicked without the other sub-categories show up then I will prefer not to show the entire page title, if this is possible.

You can disable the page title in the shop page or disable showing categories in the shop page.

Then create a menu in Appearance > Menu as per your needs, then add this menu to HTML block by means of Mega menu widget https://xtemos.com/docs/woodmart/adding-menu-site/

and then add the shortcode to the category description https://xtemos.com/docs/woodmart/html-blocks-2/#cat_att_tag
