Sorry to say but right now there isn’t an option available to make the Swatches as Dropdown List.
Although, there is a Text Swatch option available for the Attribute Swatches.

Regarding knowing, how many Types for the Attribute Swatches are supported under the Theme, please check out the following Documentation Guide: https://xtemos.com/docs-topic/variable-products-and-swatches/

Secondly, if you want to show Attribute on the Product archive pages, something like shown in the following GIF: https://woodmart.xtemos.com/theme-settings-tooltips/grid-swatch-attribute-to-display.gif

So, you can go to Dashboard > Theme Settings > Shop > Variable Products Attribute swatches > Grid swatch attribute to display > there you can select the Attribute that you want to show: https://i.snipboard.io/iVzCbf.jpg

But you can only show one Attribute Swatch only.

Sorry, there is no third way to do it. You can only add the image from the attributes or color. The 3rd option it requires customization.

If you want to add the color instead of the image then you should edit the Attributes >> edit the color >> and add the color swatch: https://ibb.co/5MP0x6R

1- We have visited your Site, the extra Variant options that you mentioned to remove aren’t appearing on the Single Product page of your Site: https://ibb.co/DMCyQWv

2- Regarding the Add to Cart button width increasing, please apply the following Custom CSS on your Site under the Dashboard > Theme Settings > Custom CSS:

.single_add_to_cart_button.button.alt.disabled.wc-variation-selection-needed {
    width: 50% !important;
}

In this CSS, you can write your own choice of value in percentage or px. We have added 50% as an example.

4- For organizing the Color or Size Attributes according to your liking, you can go to Dashboard > Products > Attributes > there click on Configure Terms of the respective Attribute in which you want to make change > there you will see the three line Icon > you can click and hold on that and drag the values up and down according to your liking: https://ibb.co/TLwmJBS
